If you use IP authentication, there's literally no way around it. The vendor has to have it to authenticate your users. I've never heard of not giving the IP range before due to security. You can look up online where IP ranges are located geographically anyway.
If anything, you're not providing patron data, so it's safer.
There's the IP registry, where you give them your IP range and the vendors contact them. It's free for libraries (for now) but vendors pay to have access and some vendors say they'll only use it and they don't want libraries emailing them a bunch with IP updates.

I was wondering if anyone else's IT department is apprehensive about giving out IP addresses to vendors. Ours says it is a security concern, but it is required for us to subscribe to certain platforms. Any advice?
